Allery Recipe:
Red Velvet Cake
Egg Free, Nut Free
1 box of Duncan Hines or Betty Crocker Red Velvet Cake Mix
1 can or 12 ounces of Diet Sprite or Sierra Misst
1 can of vanilla frosting
Directions:
Mix the cake mix with the Diet Sprite or Sierra Mist. Pour in a greased 9 x 13 baking pan and bake according to directions on box. When cool, spread the frosting. Easy as pie, or cake!
What I love about this recipe is that not only is it super easy, the omit water and oil and substitute diet soda trick applies to all types of cake mix. If you want chocolate cake, use a darker soda such as Diet Coke or Pepsi. For lighter cake recipes like above or lemon or white cake use a clear diet pop.
Pumpkin Cookies
Egg Free, Nut Free
1 box of Betty Crocker Cake Mix
1 regular size can of pumkin
1 cup chocolate chips (optional)
Directions:
Mix cake mix with the can of pumpkin. Mixture will be stiff due to the lack of liquid in the recipe but trust me this is ok. Add chocolate chips if desired. Once cake mix is thoroughly mixed, drop by spoonful onto greased baking sheet or parchment paper. Cookies tend to bake into the shape they are dropped in, they don't spread out much. For us at home, I just lump them on there. If I am making them to take somewhere and want them to look a smidge fancier I simply put the batter into a pastry bag or a ziplock bag and cut a small tip off the corner to pipe the batter through. Bake at 350 for about 8-10 min or until cake tester comes out clean. Top with cream cheese frosting and YUM!
